It was cold outside and I wanted to bake something, because there’s nothing better on a cold winter day than a hot oven and fresh bakery. I made a batch of Mom’s chocolate chip cookies.
These were the cookies I grew up on. These were the first cookies I learned how to bake. On the first night at my first apartment I mixed up and ate a whole batch of this cookie dough (raw eggs be damned!) as an act of independence. Mom’s chocolate chip cookies are still following me around, giving me a cozy feeling on this winter day.
I’m not going to give a recipe because these cookies would have no significance to you. These aren’t just chocolate chip cookies, they’re Mom’s chocolate chip cookies. There must be dozens of recipes for “Mom’s chocolate chip cookies” because nearly every mom in the universe makes chocolate chip cookies at some time or other, even if they come out of the grocery store refrigerator case. What makes them special is that they’re the cookies your mom made. And they’re delicious.

‘Mom’s’ recipes are always the best! I made my mom’s “sunshine cupcakes” this past weekend, and they were delicious! Best part was making them with my granddaughter, who although she’s only 2-1/2 right now, will someday be my age and could be making her great grandmom’s sunshine cupcakes with her grandchildren!
Wow, what gives sunshine cupcakes their name? Are they made with sunshine? Do they taste like sunshine? Do they bring sunshine into your day? I think it’s really cool how recipes are made and appreciated by multiple generations, no matter how simple or complicated. I bet you and your sous chef had a lot of fun making Great Grandma’s sunshine cupcakes!
Sunshine cupcakes are actually made with just yellow cake mix! But then Grandma added the secret ingredient of sunshine – which gives them their ‘vibrant’ yellow color, and they make you smile like sunshine does when you eat them! My kids never questioned how Grandma got the ‘secret ingredient!’ As for my sous chef, she enjoys the frosting much more than the actual cupcake!
I always love the frosting best too! The kids are lucky to have a
